Mini Banana Muffins

IMG_3734ggg2These Mini Banana Muffins are our latest favourite. So simple to make and totally delicious. This recipe is perfect if you are wanting to use up those leftover ripe bananas. 

These muffins taste just like good ole’ fashioned banana bread except instead of having to bake the bread for an hour, these muffins are ready in only 15 minutes. Chocolate chips or walnuts would be a great addition to these muffins if you are wanting to add a little somethin’ extra.

  1. {yield: approx. 48 mini muffins}
  2. 3/4 cup sugar
  3. 1 stick unsalted butter, at room temperature
  4. 2 large eggs
  5. 3 ripe bananas, mashed
  6. 1 tablespoon milk
  7. 1 teaspoon vanilla extract
  8. 1/2 teaspoon ground cinnamon
  9. 2 cups flour
  10. 1 teaspoon baking powder
  11. 1 teaspoon baking soda
  12. 1/2 teaspoon salt
  1. Spray muffin pans with non-stick cooking spray or line with muffin liners; set aside. Preheat oven to 350 degrees F.
  2. In the bowl of your stand mixer, cream the sugar & butter together until light & fluffy. Add in the eggs one at a time, making sure to beat well after each addition.
  3. In a separate small bowl, combine the mashed bananas, milk, vanilla and cinnamon. In another bowl, mix together the flour, baking powder, baking soda, and salt.
  4. Add the banana mixture to the butter mixture and stir until combined. Add in the dry ingredients, mixing until the flour disappears.
  5. Fill muffin cups using a small spoon (1 TBSP) and fill only 3/4 of the way full. Bake for 11-14 minutes. Remove from oven and let muffins cool in the pan for about 5 minutes, than remove muffins from the pans and transfer to a wire rack to cool completely.
