St. Patrick’s Day Mini Donuts

This is the second St. Patrick’s Day-inspired recipe that we are sharing and it is definitely my favorite (although I may be just a tad biased as I loooove mini donuts. ­čśë )
These St. Patty’s Style Mini Donuts are the perfect treat to bring to a party/celebration. Totally festive & delicious. But the best part: they are easy peasy to make.
If you haven’t made homemade donuts before, you may think that it would be hard but they are actually extremely simple. All you really need is a mini donut pan which you can pickup at any bakeware shop, and you will most likely have all the ingredients needed for this recipe in your cupboard already!

These mini donuts taste like old school bakery donuts, (thanks in part to the nutmeg and cinnamon) but are actually healthier for you since they are baked, not fried. I topped the donuts with a simple glaze and added some shamrock sprinkles to make them even more festive.

Dry Ingredients
  1. 1 cup all-purpose flour
  2. 1/2 cup sugar
  3. 1 1/2 teaspoon baking powder
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon cinnamon
  6. 1/4 teaspoon nutmeg
Wet Ingredients
  1. 1/2 cup milk (can use almond milk)
  2. 1/2 teaspoon vanilla extract
  3. 1/2 teaspoon apple cider vinegar
  4. 1 egg
  5. 4 tablespoons unsalted butter
For the Icing
  1. 1/2 cup confectioners sugar
  2. 1 tablespoon milk (can use almond milk)
  3. food colouring and sprinkles to decorate
  1. Preheat oven to 350 degrees F. Spray donut pan lightly with non-stick cooking spray; set aside.
  2. In a large bowl, mix together the dry ingredients.
  3. In a small pot, mix together the wet ingredients. Heat on the stove top on low heat until ingredients are blended and the butter is melted.
  4. Pour the wet ingredients into the bowl of the dry ingredients and lightly mix until just combined. Don't overmix.
  5. Place approx. a teaspoon of batter into each donut mold. Batter is sticky - use your finger to help spread the batter evenly. The batter will rise quite a bit so fill each donut well 3/4 full.
  6. Bake for only 10-12 minutes. Tip and shake baked donuts onto wire cooling rack - they should just pop right out. Repeat until the batter is done.
For the Icing
  1. Mix the icing sugar and milk together in a small bowl. Once the donuts have cooled off a bit, dip each one into the glaze. Top with sprinkles.
